Outdoor Man Chicken

Gerry Whitman, legendary Big Green Egg Chef, shares one of his best recipes with us.  Gerry has the distinction of having been interviewed in our Profiles In Wing Courage series in the original days of the paper Wingazette®.  Check out his interview here.

Gerry became known as the Outdoor Man in the mid-1980’s.  Our cat Rossi had a propensity for escaping the house and getting outside.  Gerry was always there during the searches for the Ross Cat.  For a number of years, Ross thought Gerry was a bad person when he came into the house, because he always saw him when he was hiding and frightened at being outdoors.

Here’s the recipe for Outdoor Man Chicken, best prepared on a Big Green Egg

1 egg, beaten

1 garlic pod (crushed)

1 cup oil

1 tsp. Black pepper

2 cups Apple cider vinegar

3 tbsp. Salt

1 tbsp. Poultry seasoning

Chicken breasts

Marinate the chicken breasts with skin on, for about 2 hours.  Grill over medium heat (300°), turning and basting frequently until done – about 40 minutes.

For posterity, the original recipe
