
This section of the cookbook is designed for those wanting to
eat right, or in our case, those on a
low-fat, high fiber diet. Having been diagnosed with Type II diabetes late
in 2002, I will be expanding this section of the cookbook a good deal in 2009.
These recipes really taste good, and if you watch your portion size can be very
good for you as well. Each person's dietary needs are different.
There is no single food plan that works for everyone. That's why we're
going to include a nutritional analysis with each recipe. Then, no matter
what your dietary goals, you have the information you need to choose the recipes
that are right for you.
In January 2000, I weighed 230 pounds. In January of 2004, I
weighed 160 pounds, my high school weight. It is truly amazing what diet
and exercise together can accomplish.
