Eddie's Potatoes

Named for Eddie Gard of New York City, these delicious potatoes could be known as Thrice Cooked Potatoes, as they are cooked by three different methods.  You'll want to plan a day ahead of time, but this is an easy recipe to do.  We use Canola oil to deep-fry with for health purposes.  If you don't have an outdoor grill, we suppose you could broil them for the last step in place of grilling.

    Select and wash a medium (5 oz.) baking potato

    Place the potato in heavy-duty foil

    Roll the foil down and wrap "drugstore" style

    Pre-heat the grill or oven to medium 350-400º F.

    Bake the potato for 1 1/2 hours

    Remove the potato from the foil, let cool, then refrigerate overnight.

    Slice the potato into 3/8" thick slices

    Pre-heat the fryer to 375º F.

    Deep-fry at 375º F. for five minutes

    Drain potato slices on paper towel and allow to cool

    Grill slices for five minutes - medium heat

    Season with Chef Paul's Salt-Free Seasoning!
