Collard Greens

1 ham hock

2 bunches of collard greens

½ cup sugar or SplendaÒ

¼ cup sea salt

¼ tsp red pepper flakes

Wash and clean the greens by removing the center stems from each leaf.  Tear into bite size sheets.  Boil 4 quarts of water and add the ham hock for 30 minutes.  Add the sweetener, salt and pepper flakes and stir.  Add the greens and return to a boil.  Reduce heat and simmer for3 hours.  Drain and serve greens.
