Bob Kim-Chi

This is Bob Kim's ancient Korean secret recipe - a must have for all true spice lovers:

1 head Chinese cabbage cut into 1/2" strips

3 tablespoons salt

4-5 green onions,  chopped

3 garlic cloves, minced

1/2 tsp. crushed dried hot pepper

1.4 tsp. chopped ginger root

Instructions:

Soak cabbage in salted water for 2-3 hours.  Drain.  Combine cabbage with the salt, onions, garlic, pepper and ginger and mix well.  Spoon into a large jar (it should only fill the jar about 1/2 to 3/4 of the way full...If you have too much Bob Kim-chi to put in one jar, use several jars).  Cover and refrigerate 1-2 days before using.  Keeps well for several weeks.  Makes about one quart.
